For fully ripe nuts, select ones that are dark brown in color with shiny shells and one rounded side. Steer clear of nuts with reddish shells since this indicates immaturity. Check the fuzziness of the tip— less fuzz signals better sweetness. Gently squeeze the chestnut. If it’s firm and solid, then you know it’s fresh inside.
